“This salad was inspired by a basket of onions, blackberries, cucumbers, and mint that showed up in the kitchen one day,” says Sarah Steffan, executive chef of The Dogwood restaurant at Blackberry Farm.

PICKLED BLACKBERRIES AND BLACKBERRY VINEGAR

1 cup granulated sugar

1 cup Champagne vinegar

1 cup water

3 tarragon sprigs

1 Tbsp. black peppercorns

2 cups fresh blackberries

SHAVED CUCUMBER SALAD

2 large English cucumbers

1 small Vidalia or other sweet onion

2 Tbsp. torn fresh mint leaves

Pickled Blackberries

¼ cup high-quality extra-virgin olive oil

2 Tbsp. Blackberry Vinegar

½ tsp. kosher salt

⅛ tsp. black pepper
